Carrot Cake

Ingredients
  

  • 2 cups sugar
  • 2 cups sifted flour
  • 2 tsp cinnamon
  • 1 tsp baking soda
  • 1-1/2 cups vegetable oil
  • 4 egg (room temperature)
  • Dash salt

Icing

  • 1 stick butter
  • 8 oz cream cheese
  • 1 box powdered sugar
  • 2 tsp vanilla
  • 1 cup nuts (optional)

Instructions
 

  • Sift dry ingredients, add oil and stir. Add one egg at a time, mix well after each addition. Add carrots; mix well. Pour into four layer pans. Bake at 325° for 25-30 minutes.

Icing

  • Cream butter, sugar, cream cheese. Add vanilla and nuts. Spread between layers and on top.
