Pineapple Upside Down Cake

Ingredients
  

  • 1/4 cup shortening
  • 3/4 cup sugar
  • 1 egg
  • 1-1/2 cub flour
  • 1/2 tsp salt
  • 1/2 cup milk

Topping

  • 4 tbsp Crisco
  • 1 cup brown sugar
  • 1 can sliced pineapple (2# can)
  • Maraschino cherries

Instructions
 

  • Melt shortening in bottom of eight inch cake or square pan. Add brown sugar. Spread evenly. Arrange slices with cherries in center. Cover with batter. This is a small cake. I used to double the recipe! Bake at 350° F for 50-60 minutes.
